　　外观鉴别

　　新鲜猪肉表面有一层微干的外膜，呈淡红色，有光泽，切断面稍湿，不粘手，肉汁透明。

　　次鲜猪肉表面呈暗灰色，无光泽，切断面色泽稍逊于新鲜猪肉，有黏性，肉汁混浊。

　　病死猪的放血刀线平滑，无血液浸润区；健康猪放血刀口粗糙，刀面外翻，刀口周围有深达0.5～1厘米左右的血液浸润。
