千年古城建水的大街小巷，到处可见年代古老、造型奇特、形状各异、水质甘冽的水井，至今它们仍为建水人的主要用水来源。公认优质的水井在城西门，打出的水称“西门水”，周围建起不少用水多、受水质影响大的豆腐作坊，其出产被称为“西门豆腐”，是建水的一大品牌。
